Brown Butter Low Roasted Salmon with Pickled Veg and Sour Cream

I ate a lot of salmon, sour cream and pickled cucumber as a child.. so much so that it is very hard for me to have salmon without sour cream.

For those that have not tried this combination it is (I'm biased) a winning one. Salmon is rich as hell and the sour cream adds a cool, complimentary touch. Nowadays I like to dress up my sour cream to make it that much more addictive. This almost has the feels of a loaded potato without the potato and it's better.

This salmon is "low roasted" as in cooked at a lower temp to achieve a perfect medium - med/rare that breaks away beautifully but maintains a captivating colour. The brown butter with lemon adds a subtle richness but the pickled vegetable is there to cut through and the sour cream will send your taste buds off into the airy skies. Better yet this takes all of 20 minutes.

It's my son's birthday today. Meatballs were requested but we had this last night ....he had second helpings with extra sour cream. Like mother like son

Brown Butter "Low" Roasted Salmon, Chive Sour Cream & Pickled Vegetables.

Ingredients

For the Salmon
  • Heat oven to 150C/300F
  • 1 kg Salmon fillet ( 2 lbs)
  • 75 grams(1/3 cup)  Butter
  • 1/2 Tablespoon olive oil
  • 1 Lemon thinly sliced
  • Sour cream 
  • Chives
For the Pickles and Sour Cream
  • 1/4 cucumber sliced thinly
  • 8 radishes sliced thinly
  • 1 banana shallot sliced thinly 
  • 1 Tablespoon white or apple cider vinegar 
  • 1 Teaspoon sea salt
  • 3/4 Teaspoon sugar 

Instructions

  1. To quick pickle thinly slice radishes, cucumber and shallot. Add to bowl. Add the vinegar and salt. Mix and top with water then add sugar and let it sit. Taste one or two you might want to adjust flavour based on your preference.
  2. Place the salmon on a baking tray skin side down and season. 
  3. In a pan add the butter and cook until browned, add the olive oil and the lemon pieces and cook for about a minute. 
  4. Pour this over salmon then into the oven for about 15 min or desired doneness. 
  5. Serve the fish with chives, salt and pepper mixed in sour cream. 
  6. Serve the vegetables with parsley or dill.
